Collo di pollo or stuffed chicken neck is Tuscan, peasant dish made by stuffing chicken necks with meat scraps, bread crumbs, and spices. We visit Anna in Poggio Rosso, Italy where she teaches us how to make the stuffed chicken neck recipe. She explains that this traditional recipe would be made during times of poverty where no food was wasted and the chicken's neck would be stuffed to provide substance for the peasant population.
