MARIAM'S DATE MOLASSES

"Date molasses is high in magnesium & calcium so it is good for the bones and blood. It contains a lot of minerals. Just a teaspoon will do the job. It is an excellent source of energy especially for women in labor and for athletes. It contains a lot of natural sugars and so it is a great substitute for sugar as a natural sweetener. In our household one of the oldest traditions is to eat the date molasses with pita bread and clotted cream. When I can get milk from a local farmer I make clotted cream and drizzle the date molasses on top. Or another way to eat it is to add it to tahini as a dip. I also use it in cakes and baking." - Mariam Khan

Makes 2 jars of Date Molasses

Ingredients:

  • 6 cups dates

  • water

Equipment needed:

  • Large sized pot

  • Stirring spoon

 

RECIPE:

 

Remove all the stems and pits from the dates. Add the dates to a large sized pot and cover with water. Let the dates cook down into a thick paste, adding water every so often to ensure that the dates do not dry up. Stir and monitor the pot often. The dates will be cooking for 36 hours. Strain the liquid through a muslin cloth into a pot. Place the pot on the stove over low heat, stirring occasionally and let it cook for 3-4 hours until the consistency is as thick as honey.
