Beef Stifado is a traditional dish made in Cyprus of stewed beef in a thick homemade sauce that is slow roasted for hours until perfection. My mouth is watering just recalling the incredible stifado that Deirdre made with us. Delicious, healthy, and easy to make we recommend the recipe to all!

RECIPE

Prep time: 1 hr 15 min 

Serves 6 people

 

  1. Cube the beef and place them into a ziplock bag with 1 cup of flour and a pinch of salt. Shake so that the beef cubes become dusted in flour.

  2. Add 2 shots of olive oil to a deep frying pan and heat over high flame.

  3. Next you will be adding 2 handfuls of meat to the frying pan to brown the meat. To make sure the oil is hot enough drop in one cube of beef and wait to hear the cube of beef pop and sizzle in the oil, once this happens you can add the two handfuls of beef. Make sure that the pan is not too crowded with beef and that there is space between the beef cubes (see pictures). Stir occasionally as to not let the beef burn.

  4. While the beef is cooking, dice the onions.

  5. Once the beef cubes are browned move them to your deep cookware and move on to brown the remainder of the beef cubes.

  6. Once all beef has been browned, capturing all the juicy flavors inside, then preheat the oven to 135℃ (275℉).

  7. Add the onions and a shot of olive oil to the pan where the beef was frying to cook the onions in the meat juices. Stir the onions occasionally to avoid burning.

  8. While the onions are cooking create a hot broth by dissolving the bouillon cubes in 350 ml of hot water or by heating the broth.

  9. Once the onions begin to become translucent, add the hot broth to the onions.

  10. Next, add Worcester sauce, soy sauce, 3 bay leaves, the cloves, and cinnamon. Made with Love Tip: Never forget the cinnamon! Mix the ingredients together and keep the flame on high for 5 minutes, allowing the sauce to condense.

  11. After 5 minutes, add 100 ml of apple vinegar, salt, black pepper, prunes, garlic, and the wine.

  12. Once the mixture boils, pour it onto the meat in the ceramic basin and cover with an aluminum sheet.

  13. Place the dish, covered, in the oven to allow to cook for 2 hours.

  14. Serve hot and feel free to accompany your Stifado, Made with Love, with the following sides: Baked potato, Sweet Carrots, Garlic and Lemon Green Beans

INGREDIENTS

  • 1 kg Cubed Beef

  • 5 Potatoes

  • Olive Oil

  • 350 mL of organic chicken or beef stock or 2 Chicken or Beef Bouillon Cubes (make sure they have no MSG)

  • 2 Large White Onions

  • 2 tsp Worcester Sauce

  • 2 tsp Soy Sauce

  • 3 Bay Leaves

  • ½ Tbsp Whole Cloves

  • ½ tsp ground cinnamon

  • 100 ml Apple Vinegar

  • 1 tsp Salt

  • 1 tsp Ground Black Pepper

  • Handful of Prunes

  • Handful of Dried Apricots

  • 1 Garlic Bulb

  • 2 cups Red Wine
