MAMMA ANGELA'S HOMEMADE GNOCCHI RECIPE

Gnocchi are the Italian version of dumplings. A close relative of pasta, Gnocchi are traditionally handmade from potatoes, flour and eggs. Just follow the recipe below and add your favorite pasta sauce. 

 

We travelled to Orvieto, Italy, where Mamma Angela from L'Antica Rupe taught us her favorite homemade version of the recipe. Check out the Recipe Below!!

Ingredients for Homemade Gnocchi

  • 200 g “00” Flour

  • 400 g of potatoes 

  • 1 egg

  • Salt

Recipe for Homemade Gnocchi

Serves: 5-7 people

 

  1. Boil potatoes until you can easily pierce them with a knife.

  2. Strain the potatoes and once cooled, peel. *Made with Love Tip: Keep the peel on the potatoes while they boil, to enhance their flavor.

  3. On a flat counter top, add a mound of 200 g of flour and a pinch of salt.

  4. Form a well in the center of the mound.

  5. Rice the boiled potatoes into the center of the hole.

  6. Make another well in the center of the boiled potatoes and crack an egg into it.

  7. Using a fork, whisk the eggs into the potatoes.

  8. Using your hands, slowly incorporate the flour into the eggs and potato until the mixture is homogenous throughout.

  9. Once the dough begins to form, start to kneed it by folding the dough on top of itself and pressing down on the folded dough with the palms of your hands.

  10. Split the dough into three even sized pieces and add some flour to the surface to the dough

  11. Roll out each piece of the dough so that they each form a roll that is 1 in (2.5 cm) diameter

  12. After you roll out all the dough, cut the dough into pieces that are 1 inch (2.5 cm) wide

  13. Leave the gnocchi out to dry or place them on a sheet, cover with plastic and put them in the freezer to cook at a later time.

  14. When ready to serve, boil a pot of water with salt in it

  15. Once the water boils, add the gnocchi!

  16. When the Gnocchi float to the top they are ready. Heat up your favorite sauce and serve the Mamma Angela's homemade gnocchi, Hand Rolled with Love!
