Manoushe Topping

After eating the best manoushe of our lives, we had to ask Rima to teach us the recipes behind the incredible sauces she lathers over her homemade flatbread! Check out the film and recipes to learn about Rima's sweet and tangy kishk spread and her spicy muhammara spread!

ingredients for Reema's spicy Muhammara spread

ingredients kishk tangy and sweet spread

  • 2 cups of crushed walnuts

  • 1 cup of plain biscuit crumbs

  • 4 heaping tablespoons of red pepper paste (depends on how hot you like it)

  • 1 oz of pomegranate molasses

  • 1.5 cups of olive oil

Recipe spicy muhammara spread

  • 1 raw potato, peeled

  • 1 medium sized onion

  • 1 heaping tablespoon of sweet paprika

  • 1 cup of sesame seeds

  • 1.5 cups of kshik (found at Arabic grocery stores)

  • 1.5 cups of olive oil

Add all the ingredients together and stir well. Use this as a topping for homemade Manaeesh or pizza. 

In a large mixing bowl, grate the peeled potato on the small section of the grater. Grate the onion on the large section of the grater. Stir in 1 tablespoon of sweet paprika. Add in one cup of sesame seeds, 1 cup of kshik, and 1.25 cups of extra virgin olive oil, combine all ingredients well. Once mixed well, add another pour of olive oil (about .25 cups more).  Use this as a topping for homemade Manaeesh or pizza.
