The Sunday Roast!! Sundays in Wales were traditionally meant for Chapel and family. After Chapel the family would gather around the dinner table for a big meal consisting of a big piece of meat and it's appropriate sides. For the Johnstone's and many other Welsh families, Sunday dinner is a very important part of the family life. In Wales, Dinner refers to what we call lunch in the states.The meal would be comprised of the top cut the family could find and it's proper sides. Beef would need to be accompanied with yorkshire pudding, lamb with mint sauce, pork with stuffing, and chicken with sausages and bread sauce

The Sunday meal would usually extend to Monday where the leftovers would be cooked in some way. The Welsh have unique recipes and ways to cook leftovers whether in stews, in fry ups, or pies.

  • 1 cast iron frying pan

directions for Sunday Roast meal Prep:

sunday Roast ingredients:

1/2 - 3/4 lb serving of beef per person (5-6 people + Leftovers)

  • 5 lbs of Top Side Beef (or any cut of beef for a roast)

  • 1 tsp of flour

  • Sea Salt (Welsh Halen Mon if you can!)

  • 6 medium sized potatoes, peeled

  • 1 large cauliflower 

  • 6 Carrots

  • Peas

  • Mushy Peas (if you dare!)

  • 4 eggs

  • 200 ml of milk

  • 14 g of sifted all purpose flour

  1. The beef should be at room temperature before you put it in the oven and all timing is based upon the beef. So you'll have to plan accordingly.

  2. Season the beef with a bit of flour and salt time and bring to room temperature. You will base the cooking upon the beef cooking time of  20 or 25 minutes to the pound (20 more rare). With a 20 minute rest after you

The Yorkshire pudding mix should be made 1.5 hours before you put it in the oven. so if you have anything a 4 pound piece of beef or smaller, begin by prepping the Yorkshire pudding mix. It consists of 4 eggs, 200 ml milk, pinch of sea salt, & 140 g of sifted flour 140g all purpose flour (this is about 200ml/7fl oz). Beat the eggs into the flour and sea salt. Then gradually add the milk as you continue to beat the mixture until it is completely lump-free. Cover and let rest for 90 minutes. Once the beef comes out of the over, pour the Yorkshire pudding into the muffin tins and cook until the pudding have puffed up and are a golden brown (20-25 minutes). Serve immediately with your slices beef, the sides, and a real ale.

  4. Bring the butter, milk and flour mixture to a boil and then add in a heaping hand full of cheddar cheese. Continue to stir as the cheese melts. All in one throw it all in the same pan.

  5. Cauliflower cheese sauce

  6. Carrots and peas boil them in water until they are soft enough to your liking.

  7. Peel and cut the potatoes into equal bite sized pieces. Mix them ina bowl with some olive oil and salt and add them to a large baking pan to roast in the oven

  8. When the beef is cooked, take it out of the baking pan, cover it with tin foil and pour the fat from the pan into the yorkshire pudding muffin sheet holes.
