RUSTIC CROATIAN BREAD & FRIED DOUGH

Crunchy crust on the outside and a soft dense bread on the inside, what's not to love? Eleanora's Rustic Croatian Bread is a great side with a big dinner of pasta or Croatian Stuffed Peppers, Punjene Paprike. The best part about this recipe is that it provides you with bread and a desert! If you have any dough left over you can use the same recipe to make Croatian Fried Dough or Uštipci! This is one of The Recipe Hunter's easiest go-to bread recipes (especially great when you substitute your own sourdough for the yeast starter)!

.5 kg of white flour

.5 kg of corn flour

2 packets of yeast

2 Tbsp sugar
-
1.5 Tbsp salt
-
.5 lemon rind
-
.5 liter of water
-
.5 liter of whole milk

Love Tip: You'll know the bread is ready when you knock on the base of the bread and hear a hollow sound
Recipe for Croatian Bread
Serves 10

In a small pot or tea kettle heat the milk and water together so that it becomes lukewarm

In a large bowl combine flour, sugar, yeast and salt

Crack an egg into the dry ingredients

Add a little of the warm milky water and lemon rind
-
Little by little add the rest of the milky water, and using a wooden spoon or your hands, thoroughly beat the dough until you have a wet, sticky dough, about 6 minutes. See pictures below for consistency

Cover the dough with a cloth and let sit until it doubles in size (about 45 min) *If you want the dough to rise faster you can place it in a bowl above a pot of hot water

Preheat the oven to 250 degree celcius

Once the dough has doubled in size, stir again with the wooden spoon making sure to have a consistent dough throughout

Optional: If you would like to use the same base to make Croatian fried dough, Uštipci, please remove 10% of the dough and place in a separate bowl for later

On a flat baking pan, pour a thin layer of olive oil in the pan and spread evenly throughout

Pour the dough evenly into the baking pan

Cook for 50 minutes or until golden brown

Uštipci Recipe
Serves: 10

In a deep frying pan, add 1.5 cups of sunflower oil

Heat under medium flame, lower the flame if it begins to splatter with oil

Cover your hands with vegetable oil and pull off a piece of dough (from the 10% of the Croatian Bread) with your hands, stretching it out so that it is the size of your big thumb, about 3 inches long, 1 inch wide, and 1 inch thick. Place the piece of dough into the oil. Repeat with the rest of the dough

Once the dough is golden brown on it's bottom, using a fork, flip the dough. Only flip the dough once.

Place the dough on paper towls to drain the oil and let them cool

Continue until all the dough is cooked and add sunflower oil if necessary

Plain, with cheese, or powdered sugar; Enjoy Uštipci, Made with Love!
